This is a beautiful and moist cake, perfect for an afternoon snack or when guests drop by!!!
recipe below
1 1/4 cups water
1 1/2 cups of pitted dates
1 cup of chopped walnuts
2 cups almond meal/flour
2 tbs rice malt syrup
1 1/2 tsps mixed spice
2 eggs lightly beaten
1 ripe mashed banana
2 tsps baking powder
method
preheat oven to 150 degrees Celsius and line and grease a small loaf tin
- in a saucepan add your water, dates and rice malt syrup
- bring to boil and then simmer for 5 minutes remove from heat and set aside
- in a large bowl add your almond flour,baking powder,mixed spice and mix evenly
- add eggs, mashed banana and mix well, then add your dates as well as any liquid that is leftover in saucepan and fold through
- finally stir through chopped walnuts and pour into prepared loaf tin
- bake in oven on middle rack for 50 – 60 minutes or until a skewer comes out clean once inserted in middle of loaf.
allow to cool in tin before turning onto a cake cooler
